Ingredients:
-6 cloves of garlic
-3 sprigs of rosemary
-1/4 cup of olive oil
-cheese cloth
-4 to 5 boxes of rock salt
Directions:
Sear lamb roast on all sides. Place on rolled out cheese cloth. Rub mixture all over roast. Wrap up in cheese cloth. Pour a box of rock salt in deep dutch oven. Place roast on top of salt. Cover rest of roast with remaining salt. Cook at 325 for 2.5 hours for medium rare.
